In addition to the perfect hits of crystalline saltiness, the Noble varieties of grapes like Pinot, Cabernet, Merlot and Syrah convey their unique shades, tastes and flavours of spicy acidity without changing the natural flavours and textures of the main dish. The unequal bitter tannin levels with their sweet fruity hues are used to add new dimensions to truffle cheeses, beef and salmon steaks, chicken and mushroom pate’s. Think salt and vinegar crisps but not so overpowering, a more aromatic spicy sweet and sour taste as it dissolves on your tongue. This gift is made from concentrated vintage wines from four Noble grapes: Syrah: Fruity flavours of Black Wild fruit with overtones of black pepper and gripping tannins. Merlot: Black Cherry, Plum and Herbal flavours with less bitter tannins and medium rounded flavour Cabernet Sauvignon: Full bodied flavour of red grapes, hints of vanilla with medium tannin level. Pinot Noir: Cherry, Strawberry, Plum, earthy flavour, low in tannin and strong burgundy colour. Weight of Product per pot: 30-35 gms. Packed in an Elegant Clear Gift Tube. Suggested Uses: 1. 'Shades of Pinot Salt' sprinkled over fish and chips, gives it a subtle flavour of fruity acidity and salt without the harsh rawness of vinegar. 2. It is said that a few grains of 'Shades of Syrah Salt' can mellow a high tannin red wine. 3. Marinate steaks of beef, pork, salmon with a level tablespoon of 'Shades of Cabernet Salt' overnight. Grill for a crisp outside crust and a juicy meaty flavour inside. Liquid wine used for marination makes the meat too wet during grilling. 4. Roll balls of dark chocolate ganache in a mixture of cocoa powder and 'Shades of Cabernet Salt' crystals for those hits of Mulled Wine flavour in Dark Chocolate truffles. 5. Add a tsp of 'Shades of Syrah Salt' to pork mince with all-spice, onion powder, milk-soaked bread crumbs and finely chopped sage. Roll into meatballs and cook to create a traditional Tuscan Meatball dish. 6. Creates Tuscany’s famous Spaghetti All'ubriaco or “Drunken Pasta” by using a tablespoon of “Shades of Syrah” in place of wine. 7. Salt-cure meats by marinating chopped meat with 'Shades of Syrah Salt', garlic powder and smoked paprika, then dry hung for 3 weeks, creating an intense wine flavour in air-cured saussisons. Try it! 8. Make vintage 'Shades of Merlot Salt' butter by mixing 2 tbsp into 250 gms of unsalted softened butter, with softened shallots, thyme, garlic and tarragon, rolling it into a sausage and chilling in the fridge. Cut a rondelle of butter and melt it over hot roasted veg and grilled steaks just out of the oven. 9. Season chicken livers with 'Shades of Cabernet Salt' before pan-searing to make the perfect chicken liver and red wine flavoured pate’. 10. Brush the top of a Camembert with honey and sprinkle the sticky surface with 'Shades of Syrah Salt' crystals. Ideal for a cheeseboard. 11. Sprinkle 'Shades of Merlot Salt' over Japanese Sushi where soybean dipping sauces would overpower the delicate freshness of sashimi or steamed sweet sushi rice.
