Billy Franks

Having grown up in Texas, founder Will Yates was literally teethed on a piece of beef jerky. When he moved back to the UK, he was unable to find anything as healthy, wholesome and tasty as traditional Texan style jerky - so Billy Franks was born. What started off as a passionate hobby in Will’s home kitchen grew and grew, so much so that he left his job to make jerky full time. He moved production into a small unit above a brewery in Hackney Wick for a couple years and then last year, after a successful crowd funding campaign, we moved into a much larger space behind Maltby Street Market. Passionate about provenance and quality, Billy Franks only uses the best British grass fed beef and free range turkey to make the healthiest (and tastiest) jerky on the market. Our jerky makes the perfect afternoon snack to help beat the 3pm slump, as a natural protein source after the gym and pairs perfectly with a pint after work. Our infamous bacon jam, well...that's a whole other story. Will was tasked with creating the ulitmate topping for the Big Apple Hot Dog Topping Competition (we took home the gold!) and came up with his Boozy Bacon Jam as part of a deconstructed chilli cheese dog. It became the stuff of legend, so much so that each time he would make a small batch, it would sell out before he could even put it up on the Billy Franks website. Finally, we invested in some bigger pots and pans to bring to the masses the meatiest and most versatile jam around!
